At Hanagasumi, we have prepared a seasonal kaiseki course featuring sakura sea bream--which reaches peak flavor when cherry blossoms bloom--and fresh spring mountain vegetables.

Menu

  • Appetizer: Spring mountain vegetables with firefly squid and scallop, dressed in Tosa vinegar
  • Soup: Steamed sakura sea bream with sakura leaves, served with radish, bracken, and lily bulb petals
  • Sashimi: Thinly sliced sakura sea bream and Kuruma prawn, served with condiments, rock salt, and ponzu sauce
  • Grilled Dish: Grilled greens with harutsugugyo (spring fish), accompanied by snap peas, broad beans, green peas, and kinome leaves
  • Simmered Dish: Braised udo root and octopus with cherry blossom seasoning, served with kogomi (fiddlehead fern)
  • Main Dish: Hot pot with bamboo shoots, fresh wakame seaweed, and wagyu beef, cooked in paper
  • Rice Dish: Tai Chazuke--Sakura sea bream over rice with dashi broth, accompanied by condiments and pickles
  • Dessert: Rare cheesecake with mixed berries
